Hello all,
Lin Yi Ming in MedaCorp or last time known as TCS (Television
Corporation of Singapore) mentioned about selecting durians on one of
the channel 8 chionese vareity show. He says that to know how to buy
durians is to do the following: -

1) Check ends of the cut off stalk of the durian to see what colour
and if the end is yellow is yellow flesh and if it is whittish is the
flesh is milky white. Yellow flesh is sweet while milky flesh is sweet
with bitter taste.

2) Check the spikes on the surface of the durians and if the sharp
spiles on the durians are very near to each other means the durians
inside are more compact while the spikes are fuirher means the durians
inside are more space apart means less fruit.

3) Make sure the surface of the durians with spikes got no blacken
mark like 'rotting' look on the durians that means certain part of the
opening of durians compartments will find some portion of the husk
inside rotting or the fruit sometimes got some 'rotting' look. You can
still bite away portion that is not affected.

4) The other important factor to look for is to make sure the durians
is light so that the inside seeds are small amd the flesh of the
durians are big to such that one just eat a few will get stomach full.
The way to feel the durians of heavy or light easily is to use you
thumb and yoursecond finger to hold on to the vut off stalk of the
durian and lift up to feel if you find the durain is heavy or light.
Heavy durians means the seeds are very huge with little flesh wrap
around the seeds.

Mangosteen is considered as queen of fruit (cooling) of South East
Asia as Durians are known as King of fruit (also for its heatiness).
You have to see the markings of petals underneath the round portion of
the fruit husk and from here you can see that with the more petals on
the husk means more fruit, that's all............

Goodness I never thought how to make visual selection on that. I loved
durians and mangosteens, but often not sure how to choose them.

Most durians I bought were already pre-taken out of its husks by the
sellers..
The sellers had laced them in polysterine box and the box was tightly
wrapped with shrink wrapping.

Once done, commuters can take them home by bus, train or taxi.This is
to prevent disrespectful smell that is offensive to the others. And
back to this case, nobody had complained of it, as there was no smell
emanated from the polysterine box.

Buying duran in styrofoam box is risky.
Durian sellers often opened those old stock
and pack them in styro boxes...most are
many days old.
Also, those durians rejected by buyers are
also packed in styro boxes...for sales to
unsuspecting buyers.

It is risky to buy durians in boxes..it is better
to choose whole durian...and get the seller
to open them....and to pack them in boxes.

True. The question of food hygiene comes in also. I have seen durian
sellers blowing their noses, then take the fruit with their hands and
pack them into styrofoam boxes.

Yes. Food hygiene is very important. That's why you
should watch to see if the durian seller practise good
hygiene when handling the fruit.
No, not wearing plastic gloves. A skillful durian seller
can open the durian without touching the flesh...
then transfer the flesh into the box expertly, using
the tip of the knife...without touching it with his hands.

Seriously the govt of NEA should disallow the sale of pre-packed
durians in styrofoam.

This was because on one occassion while I was having coffee at a
coffeeshop that I saw the guy attending his makeshift stall on the
outside part of a HDB shop was taking out prepacked durians that were
unsold from the previous day.

He took them out from the covered durian basket that was just hidden
away under a racks of wooden benches that were used for the displaying
of durians. He then displayed them on the makeshfit table for sale
again.

The cane basket were those that used for storing and transporting of
durians on lorry from Malaysia.

The lorry comes around on heir way distributing their basket laods of
durains to various durian places in Singapore.

Their frequency of their delivery visits depends on the frequency of
ordering levels from the stall holder.

As the durian stall was next to the coffeshops, most people often
passed by and stopped by to have a look of their offerings which
included of fruits and others and so on .

I stopped by to have a look when they made their sale pitches. After I
finshed my coffee, I have to walk passed the stall. The guy there made
his sale pitch offering their durians.

I stopped and took a look of his offers. I chit-chatted with him. I
then curiously looked at the styrofoan boxes of durians that were
displayed.

I then observely noticed some of the durians is beginning to disclour
as it looks a little of-colour or dull.

By lookng through the shrink wrapped box I cannot visually see clearly
if it was indeed spoilt or not.

I can only say perhaps given the hot weather conditon in Singapore,
durian in prepacked styrofoam box on displayed the whole day will
likely to begin to get spoilt.

This is due to the hot weather condition of humid heat had entered the
durians through the shrink wraps that was wrapped on the styrofoam. In
any case I must say I have no knowledge how long durian will get spoil
if it is not under refrigerated condition.

I think the govt of NEA should not allow the use of styrofoam to pack
durian except only when a whole durian is ordered by the customer and
that it is opened in front of the customer.

And that the durian in the husk is immediately flipped into the
styrofoam box . It should then immediately shrink-wrapped and is
immediately taken away by the customer. These standard operating
procedures will help prevent food poisoning and transmitting of
handler-borned disease to the customers.

As such the govt of NEA should not allow prepacked sales of durians in
styrofoam box, as there is no way for customers to verify if the
prepacked condition was overnight or not, or even if it was spoiled or
not.

The handling hygiene of the person pre-packing the durians was also
doubtful as there was no way to personally verify hwo he handled the
durian fruits. There is also no prior way for the customer to have a
look at him if he was using of glove or not.

In so far I have not seen of any durian guy using of plastic or
clothed glove on hsi right hand holding of his knife. Most times I
have seen was the guy uses the unwashed clothed glove on hs left hand
holding up the spiky durain husk

They is also no prior way to check if he was dirty or not on the
handling of those prepacked boxes of durians displayed on the table.
There is no way to know in advance if he has smelly body, unkempt
hair, dirty cigarretle-laced fingers, or open wounds or blisters on
his hands, and if he is a diseased-suspect carrying transmittable
respiratory diseases like typhoid, tuberculosis (like this student),
etc. The govt should address them Asap.
